calculate.","room_2_subtitle_1":"We just arrived in our distillery.","room_2_subtitle_2":"The Grollet's historic distillery with its century-old iconic Charentais stills made of copper.","room_2_subtitle_3":"In this chapter, our journey takes us from the winemaking process","room_2_subtitle_4":"to the final distillation of our eau-de-vie.","room_2_1_subtitle_1":"LOUIS XIII Cognac is made of grapes harvested exclusively from the terroir of Grande Champagne.","room_2_1_subtitle_2":"95% of these grapes are a variety of white grapes that are typical of our terroir and called 'Ugni Blanc'.","room_2_1_subtitle_3":"Ugni blanc' produces wines with very high acidity and low alcohol content,","room_2_1_subtitle_4":"which naturally protects the wine from oxidation.","room_2_1_subtitle_5":"This low alcohol content also makes it possible to better concentrate the aromas during the distillation.","room_2_1_subtitle_6":"The harvest usually starts in mid September.","room_2_1_subtitle_7":"Our grapes are then pressed as a crystalline juice with high acidity level","room_2_1_subtitle_8":"and stored in fermentation tanks for a short period of 4 to 6 days","room_2_1_subtitle_9":"so grape juice naturally turns into white wine.","room_2_1_subtitle_10":"This low alcohol wine (8 to 10%) is perfect for distillation,","room_2_1_subtitle_11":"and ideal for aromatic concentration.","room_2_1_subtitle_12":"Remember this: you need 12 kilos of grapes","room_2_1_subtitle_13":"to produce 9 liters of wine and eventually obtain 1 liter of eau-de-vie.","room_2_1_subtitle_14":"Once we get this precious liquid, we can then proceed to the 'distillation on the lees'.","room_2_2_subtitle_1":"Distillation is an art and it takes talent to master it.","room_2_2_subtitle_2":"At LOUIS XIII Cognac, we follow the ancestral traditional method of double distillation since the 17th century","room_2_2_subtitle_3":"in specific copper stills also called 'Charentais stills'.","room_2_2_subtitle_4":"Distillation is strictly regulated and must start at the end of October","room_2_2_subtitle_5":"and finish on the 31st of March at the latest.","room_2_2_subtitle_6":"Our distillation process comes with its own specificities.","room_2_2_subtitle_7":"The first is what we call 'Distillation on the lees',","room_2_2_subtitle_8":"a traditional method that gives the eaux-de-vie smoothness, better aging potential and more aromas.","room_2_2_subtitle_9":"The second one is the use of small copper stills (2,500 liters maximum)","room_2_2_subtitle_10":"thus allowing a better concentration of intense aromas.","room_2_2_subtitle_11":"The third one is the double distillation process.","room_2_2_subtitle_12":"The first distillation, also called 'Premi\u00e8re chauffe', lasts around 12 hours.","room_2_2_subtitle_13":"Once the boiler is heating up and the alcohol reaches its boiling point of 78.3\u00b0C,","room_2_2_subtitle_14":"it is the alcohol vapors that are the first to rise.","room_2_2_subtitle_15":"The vapors accumulate in the marquee and progress slowly as the heat increases.","room_2_2_subtitle_16":"Vapors then pass through the 'gooseneck' and into the wine heater.","room_2_2_subtitle_17":"The wine heater is filled with wine, which will be slowly poured into the boiler.","room_2_2_subtitle_18":"As the vapors pass through the duct, they are gently cooled.","room_2_2_subtitle_19":"Finally, vapors descend into the coil.","room_2_2_subtitle_20":"Passing through this tank of cold water, the vapors slowly condense to turn into an alcoholic liquid.","room_2_2_subtitle_21":"This liquid is then collected and is divided into 3 types of distilling.","room_2_2_subtitle_27":"Finally, the third distillate to be collected is the 'Tails'.","room_2_2_subtitle_28":"Heads' and 'Tails' are then being distillated over and over again with further wine","room_2_2_subtitle_29":"so more 'Brouillis' can be extracted and be ready for 'La Bonne Chauffe',","room_2_2_subtitle_30":"which is the second distillation.","room_2_2_subtitle_31":"La Bonne Chauffe' is a similar process to the 'Premi\u00e8re Chauffe'","room_2_2_subtitle_32":"but this time using 'Brouillis'.","room_2_2_subtitle_33":"The first liters of distillate obtained from the 'Bonne Chauffe' are referred to as the 'Heads'.","room_2_2_subtitle_34":"They have a higher alcohol content (between 78% and 82% abv) and are separated from the rest.","room_2_2_subtitle_35":"As the
